*music* Hi, I'm Steph Gaudreau from Stupid EasyPaleo and today we're making my Green Chile Chicken recipe.

When I was a kid myknowledge of Southwestern food was relegated to Ortega tacos.

We'd never really had a very adventurous foray into ethnic food as Iwas growing up.

When I moved to Southern California it was like the doors gotblown off anything I ever knew about Southwestern cuisine.

For the firsttime I had Green Chile Chicken at a restaurant and I just could not believehow freakin' delicious it was.

I wanted to make it at home.

Youseason the chicken – I use a mixture of chicken thighs and chicken breasts.

I like the shreddiness of the chicken breast but the chicken thighs reallyadd a lot of flavor.

We seasoned the chicken with some cumin, groundcoriander, salt and pepper.

Then we put that in the bottom of the slowcooker.

To that we add the tomatillos, onion, green chilies, and the garlic – all of our awesome flavorings.

I add a little bit of broth.

Then I put the cover on the slow cooker, set it for five hours on low, andwalk away.

When I come back, it is done and delicious.

All I have to do isshred the meat.

It becomes fall-apart tender because you've let it cook niceand low and slow throughout the day.

This dish has a good helping of lean proteinbut it also has a little bit of that flavor from the chicken thighs.

If you'resomebody who's active, you're lifting, you're doing any kind of sports and youneed a little bit more protein, the cool part is you can make this and freeze it.

So put it in the in the freezer, pull it out at any time, and you can bank yourprotein.

That's kind of one of the hard parts is coming home after along day and then having to think about slow cooking something.

It's notgoing to happen.

In our house we like to make somedouble batches to freeze.

That way we come home from the gym we've got a nicepost-workout meal or a super easy dinner.

You can jazz it up at the end with some limeand cilantro, serve it over rice, cauliflower rice, or anykind of veggie noodle that you want.

And you've got a really awesome dinner.
